Ingredients
  

  • 3 tablespoons butter
  • 2 cloves garlic finely minced
  • 2 cups heavy cream
  • 5 ounces Parmesan grated
  • 1/8 teaspoon ground nutmeg
  • Salt & pepper to taste

Method
 

  1. Melt butter in a pan over medium heat. Add garlic and cook for 1 minute.
  2. Pour in cream and bring to a simmer, stirring often.
  3. Stir in Parmesan and nutmeg. Cook for 8–10 minutes until thickened.
  4. Season with salt and pepper to taste.
  5. Remove from heat and serve, or let cool for storage.

• For extra smooth texture, use freshly grated Parmesan rather than pre-shredded.
