Ingredients
  

  • 12 oz gluten-free fusilli or any pasta of choice
  • 12 oz chicken sausage sliced into rounds (See Recipe Notes)
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter
  • 2 –3 tablespoons minced garlic
  • 1 tablespoon Italian seasoning
  • ¼ cup dry white wine
  • 1 cup heavy cream room temperature
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried parsley
  • ¼ teaspoon red pepper flakes optional
  • ½ teaspoon black pepper
  • A pinch of nutmeg
  • Salt to taste
  • 1 cup finely grated Parmigiano Reggiano
  • ¼ cup pasta water

Method
 

  1. Heat olive oil in a large skillet.
  2. Add chicken sausage and cook until browned on both sides.
  3. Remove and set aside.
  4. In the same skillet, melt butter over medium heat.
  5. Add garlic and cook until fragrant, then add Italian seasoning.
  6. Pour in white wine and simmer.

Notes

  • Feel free to use any chicken sausage flavor—smoked, spicy, or herbed all work well.
  • You can substitute vegetable broth for the white wine.
  • Add baby spinach or sun-dried tomatoes for extra color and nutrients.
