Ingredients
  

  • 11½ oz penne or fusilli pasta
  • 1 tbsp olive oil
  • 1 lb ground Italian sausage
  • 1 small yellow onion diced
  • cloves garlic minced
  • 2 tbsp tomato paste
  • ½ cup chicken broth
  • 1 14.5 oz can diced tomatoes (with juice)
  • ¾ tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp dried parsley
  • Salt and pepper to taste
  • 1 cup half and half or heavy cream
  • ½ cup grated Parmesan cheese
  • cup shredded mozzarella cheese

Method
 

  1. Cook pasta in salted water until al dente.
  2. Reserve ¼ cup water, drain, and set aside.
  3. Heat oil in a skillet. Cook sausage until browned. Remove to a plate.
  4. Add onion; cook 5 minutes.
  5. Stir in garlic and tomato paste; cook 1–2 minutes.
  6. Deglaze with broth.

Notes

  • You can use spicy Italian sausage if you like a kick.
  • Swap penne or fusilli for any short pasta you have on hand.
  • To lighten things up, use half-and-half instead of cream.
