Ingredients
  

  • 1.5 lbs boneless skinless chicken breasts (about 3 large breasts) or chicken cutlets
  • ½ cup whole wheat flour
  • 3 large eggs
  • cups shredded mozzarella
  • cups marinara sauce
Breading Mixture
  • 1 cup whole wheat breadcrumbs unseasoned
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon black pepper
  • 2 teaspoons dried basil
  • 2 teaspoons dried parsley

Method
 

  1. Slice chicken breasts in half lengthwise and pound between plastic wrap until ¼ inch thick.
  2. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  3. Set up three shallow bowls: flour in the first, whisked eggs in the second, breadcrumb mixture in the third.
  4. Dredge each cutlet in flour, dip in egg, and coat in breadcrumb mixture.
  5. Place breaded cutlets on the baking sheet.
