Ingredients
  

  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 cup panko breadcrumbs
  • cup grated parmesan cheese
  • 2 teaspoons Italian seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 1 lb boneless skinless chicken breasts sliced into cutlets
  • Chopped parsley or basil to taste (optional)

Method
 

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. In a shallow bowl, melt butter with olive oil and garlic powder in the microwave; whisk until smooth.
  3. In another bowl, combine breadcrumbs, parmesan, seasoning, salt, and pepper.
  4. Slice chicken breasts horizontally to create thinner cutlets.
  5. Dip each cutlet into butter mixture, then dredge in breadcrumb mixture, pressing to coat both sides.
  6. Place chicken on the baking sheet and bake for 20 minutes, flipping halfway through.

Notes

  • Panko gives extra crunch—don’t substitute with regular breadcrumbs unless needed.
