Ingredients
  

For the Chicken:
  • 4 boneless skinless chicken breasts
  • Salt and freshly ground black pepper to taste
For the Breading:
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tbsp water
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp dried Italian herbs oregano, basil, thyme
  • ½ tsp paprika
For Frying:
  • 2 –3 tbsp olive oil or melted butter

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Pound chicken breasts to ½ inch thickness. Season with salt and pepper.
  3. Set up breading: flour in one dish, eggs and water in another, Parmesan-panko mixture in a third.
  4. Dredge chicken in flour, dip in eggs, then coat in breadcrumb mixture.
  5. Heat oil or butter in oven-safe skillet.
  6. Sear chicken 3–4 minutes per side until golden.
  7. Transfer skillet to oven and bake 10 minutes, until chicken reaches 165°F (74°C).
