Ingredients
  

  • ½ cup rolled oats
  • 1 cup milk or dairy-free alternative
  • 1 large egg
  • 1 –2 tbsp maple syrup or honey
  • ½ tsp vanilla extract
  • Pinch of salt

Method
 

  1. In a saucepan, combine oats, milk, and salt. Simmer until soft.
  2. In a bowl, whisk egg with vanilla and maple syrup.
  3. Temper egg with a few spoonfuls of hot oats, whisking constantly.
  4. Pour egg mixture into pot and stir over low heat until creamy.
  5. Serve warm with desired toppings.

Notes

  • Rolled oats work best here; steel-cut oats take longer and won’t give the same creamy texture.
  • Use almond milk or oat milk for a dairy-free version.
