Dorito Taco Meatloaf

This Dorito Taco Meatloaf brings a bold Tex-Mex twist to your classic comfort food. Packed with taco flavor, melty cheese, and crushed Doritos for an irresistible crunch, it’s the ultimate weeknight dinner that the whole family will devour!

Ingredients
  

  • 1 ½ lbs lean ground beef – or ground beef/pork blend
  • 2 cups crushed Dorito chips – or crushed tortilla/corn chips
  • 1 cup finely chopped onion
  • ¼ cup taco seasoning
  • 2 eggs
  • cup milk – or broth/water
  • 1 cup taco sauce
  • 1 cup shredded Monterey Jack with jalapeños – or pepper jack/mozzarella

Method
 

  1. Preheat oven to 350°F. Line a baking sheet with foil and spray with nonstick spray.
  2. In a bowl, combine beef, chips, onion, seasoning, eggs, and milk.
  3. Mix just until combined.
  4. Pack mixture into a loaf pan, flip onto baking sheet, or shape by hand.
  5. Bake uncovered for 40 minutes.
  6. Remove from oven, spread taco sauce and cheese on top, add extra chips.
  7. Bake 10 more minutes.

Notes

  • If using a beef/pork blend, reduce added salt—most taco seasonings already include it.
  • Crushed corn chips or plain tortilla chips work well if you're out of Doritos.
  • Leftovers make amazing taco-stuffed sandwiches!
