Ingredients
  

  • cup melted butter
  • ¾ cup granulated sugar
  • 2 –4 very ripe bananas
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 ½ cups all-purpose flour

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan with butter, oil, or spray.
  2. In a mixing bowl, combine melted butter and sugar.
  3. Add bananas, mash well, and mix into the butter mixture.
  4. Stir in egg and vanilla extract.
  5. Mix in baking soda, cinnamon, nutmeg, and flour.
  6. Stir just until combined.
  7. Pour batter into the prepared loaf pan.

Notes

  • Use 2 bananas for less sweetness and 4 for a richer banana flavor.
  • Add chocolate chips or chopped nuts for extra texture.
  • Overripe bananas with black spots are perfect here!
