Easy Chicken Noodle Soup

This hearty chicken noodle soup is made with real ingredients and no fuss—just flavorful broth, shredded chicken, fresh vegetables, and perfectly cooked noodles in under an hour.

Ingredients
  

  • 4 chicken thighs boneless, skinless or bone-in
  • 8 cups chicken broth
  • 6 cups water
  • 2 carrots sliced
  • 2 celery ribs sliced
  • 1 small onion chopped
  • 3 garlic cloves minced
  • 1 tsp salt or to taste
  • 5 oz egg noodles about 2 cups

Method
 

  1. In a large pot, combine chicken, broth, and water.
  2. Bring to a boil, then simmer 25 minutes.
  3. Remove chicken, shred it, and set aside.
  4. Add vegetables and bay leaves to broth. Simmer 12–15 minutes.
  5. Return chicken to pot and add noodles.
  6. Cook 6–8 minutes until tender.

Notes

  • For extra flavor, sauté the onion, garlic, and celery in a bit of olive oil before adding the broth.
  • Bone-in thighs add richer flavor, but boneless thighs work just as well for quicker prep.
  • Store leftovers in the fridge for up to 4 days. Reheat gently on the stove.
