Easy Creamy Chicken Marsala

This creamy chicken marsala is rich, comforting, and full of flavor. Tender chicken fillets are seared to golden perfection, then simmered in a silky mushroom Marsala wine sauce with garlic, cream, and fresh parsley. Perfect over pasta, rice, or mashed potatoes for a cozy dinner.

Ingredients
  

Chicken:
  • 1/2 cup all-purpose flour
  • 1 tsp kosher salt
  • 1 tsp garlic powder
  • 1/2 tsp cracked pepper
  • 2 boneless skinless chicken breasts, halved horizontally (4 fillets)
  • 2 tbsp olive oil divided
  • 4 tbsp unsalted butter divided
Marsala Sauce:
  • 1 tbsp unsalted butter
  • 8 oz cremini or brown mushrooms sliced
  • 4 –5 garlic cloves minced
  • 3/4 cup dry Marsala wine
  • 1 1/4 cup low-sodium chicken broth
  • 3/4 cup heavy cream or half & half / evaporated milk
  • 2 tbsp fresh parsley chopped

Method
 

  1. Mix flour, salt, garlic powder, and pepper.
  2. Coat chicken in flour and shake off excess.
  3. Heat 1 tbsp oil and 2 tbsp butter in a skillet.
  4. Sear chicken 3–4 minutes per side. Transfer to a warm plate.
  5. Melt butter in the same pan.
  6. Cook mushrooms for 2–3 minutes, scraping browned bits.
  7. Add garlic, then pour in Marsala wine and broth.

Notes

  • For a lighter version, substitute half & half or evaporated milk for cream.
  • Use dry Marsala wine (not sweet) for authentic flavor.
