Easy Fried Rice

This easy fried rice recipe is the perfect way to turn leftover rice into a delicious, well-balanced meal. With eggs, veggies, and bold flavor from soy sauce and sesame oil, it’s a one-pan dish you’ll come back to again and again.

Ingredients
  

  • 3 cups cooked cold rice
  • 2 large eggs
  • cups mixed vegetables peas, carrots, corn
  • 3 tablespoons soy sauce or to taste
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil for cooking
  • 2 cloves garlic minced
  • 3 green onions chopped

Method
 

  1. Prep all ingredients before starting.
  2. Heat 1 tablespoon oil in a skillet. Scramble eggs, then remove and set aside.
  3. Add a little more oil. Sauté garlic, then add vegetables. Stir-fry 2–3 minutes.
  4. Add crumbled rice. Stir-fry until hot and slightly crispy.
  5. Season with soy sauce and sesame oil. Toss to coat.
  6. Add eggs back in. Stir gently to combine.

Notes

  • Cold, day-old rice works best—it’s drier and fries better without clumping.
  • Use any mix of veggies you like: frozen blends work great.
  • Add cooked chicken, shrimp, or tofu for a heartier version.
