Ingredients
  

  • 8 oz halloumi cheese
  • 2 tbsp Greek yogurt
  • 1 tbsp adobo sauce
  • 1 tsp fresh lime juice
  • 4 –5 corn or flour tortillas
  • 1 large tomato chopped
  • 2 tbsp diced onion red or white
  • Handful of cilantro

Method
 

  1. Slice halloumi into 8–10 thin slices.
  2. Cook halloumi in a skillet over medium heat for 5 minutes per side until golden brown.
  3. Mix yogurt, adobo sauce, and lime juice.
  4. Spread sauce on tortillas. Add halloumi, tomato, onion, and cilantro.
  5. Serve immediately.

Notes

  • Swap the adobo-yogurt sauce for sour cream or chipotle mayo if preferred.
