Ingredients
  

  • 3 cups Greek yogurt plain (non-fat or low-fat)
  • 3.5 tbsp key lime juice
  • 2 tbsp powdered Swerve or 1 tbsp honey adjust to taste
  • 1 tsp vanilla extract
  • 1 tbsp lime zest
  • 1 scoop vanilla protein powder regular or dairy-free
  • 1/2 cup crushed gluten-free graham crackers
  • 1/3 cup toasted unsweetened coconut

Method
 

  1. In a medium mixing bowl, combine Greek yogurt, lime juice, sweetener, vanilla extract, lime zest, and protein powder.
  2. Stir until smooth.
  3. Line a baking sheet with parchment paper or silicone mat.
  4. Spread yogurt mixture into a thin layer.
  5. Sprinkle graham crackers, coconut, and extra lime zest on top.
  6. Freeze for 2–3 hours or until solid.
