Ingredients
  

Peach Filling:
  • 5 –6 large fresh yellow peaches sliced
  • ¼ cup sugar
  • 1 tbsp cornstarch optional
Cobbler Topping:
  • ½ cup salted butter melted
  • ¾ cup sugar
  • 1 tsp vanilla
  • 1 cup flour
  • 1 tsp baking powder
  • Pinch of salt
  • ¼ cup turbinado sugar optional
To Serve:
  • Whipped cream or vanilla ice cream

Method
 

  1. Preheat oven to 350°F. Smear butter in 9×13-inch dish, add sliced peaches and sugar.
  2. Mix butter, sugar, vanilla, flour, baking powder, and salt to form batter.
  3. Spoon topping over peaches.
  4. Bake 30 minutes, then top with turbinado sugar.
  5. Bake another 10–15 minutes, broil briefly until golden.
  6. Let cool 20–30 minutes. Serve warm with ice cream or whipped cream.

Notes

• If your peaches are very ripe, you may skip the cornstarch.
• Frozen or canned peaches (drained) can be used when fresh are out of season.
• Turbinado sugar adds a caramelized crunch but is optional.
