Easy Salmon Patties

These easy salmon patties are made with canned salmon, fresh veggies, and a few simple seasonings for a crispy, tender bite. Pan-fried in butter and olive oil, they’re golden on the outside and savory on the inside.

Ingredients
  

  • 14 –15 oz canned salmon well drained
  • 2 Tbsp olive oil divided
  • 2 Tbsp unsalted butter divided
  • 1 medium yellow onion finely diced
  • 1/2 red bell pepper seeded and diced
  • 1/2 cup Panko breadcrumbs
  • 1 large egg lightly beaten
  • 2 Tbsp mayonnaise
  • 1 tsp Worcestershire sauce
  • 1 tsp garlic salt
  • 1/4 tsp black pepper
  • 1/4 cup parsley minced

Method
 

  1. Sauté onion and bell pepper in 1 Tbsp oil and 1 Tbsp butter until golden; set aside.
  2. In a large bowl, mix salmon, sautéed vegetables, breadcrumbs, egg, mayo
  3. Worcestershire, garlic salt, black pepper, and parsley.
  4. Form into 2" patties, about 1/2" thick.
  5. In a clean pan, heat remaining oil and butter.
  6. Fry patties 3–4 min per side until golden.

Notes

  • Drain the canned salmon well to prevent soggy patties.
  • If the mixture feels too wet, add a little more Panko.
  • Leftovers are great in wraps or broken into salads.
