Ingredients
  

  • ¾ pound flank steak trimmed
  • ½ teaspoon freshly ground black pepper
  • Cooking spray as needed
  • 1 tablespoon fresh lime juice
  • ½ tablespoon olive oil
  • 2 cloves garlic minced
  • ¼ teaspoon kosher salt
  • 6 6-inch corn tortillas
  • 1 cup chopped romaine lettuce
  • 1 cup chopped red cabbage
  • 1 ripe avocado sliced
  • 1 16-ounce jar pickled red onions
  • Grilled scallions for garnish

Method
 

  1. Season steak with black pepper, pressing lightly to adhere.
  2. Heat a grill pan over medium-high and coat with cooking spray.
  3. Grill steak about 6 minutes per side, then rest 5 minutes.
  4. Whisk lime juice, olive oil, and garlic.
  5. Slice steak thinly against the grain, drizzle with dressing, and season with salt.
  6. Warm tortillas in grill pan 20 seconds per side.
