Ingredients
  

  • 1 lb ground beef
  • 1/2 yellow onion diced
  • 2 garlic cloves minced
  • 1 packet taco seasoning
  • 1 15 oz can black beans, drained
  • 1 15 oz can kidney beans, drained
  • 1 15 oz can corn, drained
  • 1 8 oz can tomato sauce
  • 1 10 oz can diced tomatoes with green chilies (like Rotel)
  • 2 cups beef broth
  • Salt and pepper to taste

Method
 

  1. Brown ground beef in a soup pot.
  2. Add onion and garlic; cook until soft.
  3. Stir in taco seasoning, tomato sauce, beans, corn, tomatoes, and broth.
  4. Simmer 10–15 minutes.
  5. Season to taste and serve with toppings.
