Fiesta Lime Chicken

This fiesta lime chicken is zesty, smoky, and cheesy with bold Southwestern flavors. Marinated chicken, black beans, and lime rice are baked or grilled in foil packs, topped with melted cheese, and finished with fresh toppings for a fun and customizable meal.

Ingredients
  

  • 4 small boneless skinless chicken breasts or 2 large, sliced in half
  • 1 15 oz can black beans
  • Optional toppings: avocado cilantro, sour cream, tomatoes, salsa, grilled corn
Chicken Marinade:
  • 2 tbsp soy sauce
  • Juice of 2 limes 2–3 tbsp
  • ¼ cup water
  • ¼ cup oil
  • 2 tsp ground cumin
  • 2 tsp garlic powder
  • 2 tsp chili powder
For the Rice:
  • 1 cup long grain white rice
  • ½ tsp chili powder
  • Juice of 1 lime
  • 4 slices Monterey Jack cheese or ½ cup shredded

Method
 

  1. Whisk marinade ingredients. Coat chicken and chill 15–30 minutes.
  2. Boil rice 5 minutes, drain, and stir in chili powder and lime juice.
  3. Lay out foil squares, divide rice, beans, and chicken. Seal tightly.
  4. Bake at 400°F for 20 minutes or grill over medium heat, flipping once.
  5. Open packs, add cheese, and cook 3–4 minutes more until melted.
  6. Add toppings and serve.

Notes

  • Use foil packs for easy cleanup and outdoor grilling.
  • Add grilled corn or salsa for extra flavor.
  • Monterey Jack melts beautifully, but cheddar or pepper jack work too.
