Fluffy Buttermilk Pancakes

These homemade buttermilk pancakes are soft, airy, and rise beautifully thanks to a perfect blend of buttermilk, baking powder, and soda. The batter comes together in minutes and cooks up golden and pillowy every time.

Ingredients
  

  • 2 large eggs
  • ¾ cup buttermilk
  • ¼ cup sugar
  • ½ teaspoon pure vanilla extract
  • ¼ teaspoon salt
  • cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda

Method
 

  1. In a blender (or large bowl), combine eggs, buttermilk, sugar, vanilla extract, and salt.
  2. Blend or whisk on low until smooth.
  3. Add flour, baking powder, and baking soda.
  4. Blend or stir until just combined—do not overmix.
  5. Heat a non-stick skillet over medium-low and coat it with non-stick spray.
  6. Spray the inside of the pancake ring as well and place on the skillet.

Notes

• For thicker pancakes, use pancake rings or mini cake molds.
• Avoid high heat—it can brown the outside before the inside cooks.
• Let the batter rest 5 minutes before cooking for even fluffier results.
