These fluffy buttermilk pancakes are my go-to for slow weekends or surprise breakfasts. With a pillowy texture and golden edges, they soak up syrup like a dream. They come together quickly, and every bite feels like a cozy hug from the kitchen!

Ingredients
  

  • 1 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
Wet Ingredients:
  • 1 1/4 cups buttermilk
  • 1 large egg
  • 1/4 cup canola or vegetable oil
  • 2 tbsp melted butter

Method
 

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk buttermilk, egg, oil, and melted butter.
  3. Gently stir the dry ingredients into the wet until just combined.
  4. Batter should be slightly lumpy.
  5. Let the batter rest for 5–10 minutes.
  6. Heat a non-stick skillet over medium heat. Lightly grease if needed.

Notes

  • For extra-rich flavor, try browning the butter before mixing it in.
  • If you don’t have buttermilk, mix 1 tablespoon of lemon juice or vinegar with 1 ¼ cups of milk and let it sit for 5 minutes.
