Ingredients
  

  • 2 large eggs
  • 1 1/3 cup whole milk 300g
  • 1 tsp vanilla extract 5g
  • 4 tbs unsalted butter melted (56g)
  • 1/2 cup brown sugar 110g*
  • 1 1/2 cups all-purpose flour 240g
  • 1/2 tsp salt 3g
  • 1 tsp ground cinnamon 3g
  • 1 tbs baking powder 14g

Method
 

  1. In a medium mixing bowl, whisk eggs, milk, vanilla, melted butter, and brown sugar until well combined.
  2. Sift in flour, salt, cinnamon, and baking powder.
  3. Whisk gently into a smooth, slightly thin batter with small lumps.
  4. Preheat a skillet over medium-low heat (around 325°F / 165°C).
  5. Add a small pat of butter to the skillet.
  6. Pour 1/4 cup of batter per pancake into the skillet.

Notes

  • For best results, don’t overmix the batter—lumps are okay!
  • Use room temperature ingredients for a more uniform batter.
