Ingredients
  

  • 1 cup all-purpose flour sifted
  • 1.2 teaspoons baking powder
  • Pinch of salt
  • 1.5 tablespoons white sugar
  • ¾ cup milk add up to 2 tablespoons more if needed
  • 1 large egg beaten
  • 1.5 tablespoons unsalted butter melted
  • 1 teaspoon pure vanilla extract
  • Canola oil for cooking

Method
 

  1. In a bowl, whisk together flour, sugar, salt, and baking powder.
  2. In a separate bowl, mix egg, milk, vanilla, and melted butter.
  3. Pour the wet mixture into the dry ingredients and stir until just combined.
  4. Batter should be thick with a few lumps. Let rest for 10 minutes.
  5. Heat a nonstick skillet over low-medium heat and lightly oil it.
  6. Scoop ¼ cup batter onto the pan. Cook 1–2 minutes until golden, flip and repeat.

Notes

  • Don’t overmix the batter—lumps are totally okay and help keep the pancakes fluffy.
