Fluffy Homemade Pancakes

These fluffy homemade pancakes are light, soft, and buttery with just the right amount of sweetness. They come together in one bowl with pantry staples and cook up golden and tender in minutes.

Ingredients
  

  • 1 ½ cups all-purpose flour
  • 3 ½ tsp baking powder
  • 1 tsp salt
  • 1 tbsp granulated sugar
  • 3 tbsp melted butter
  • 1 large egg
  • 1 ½ cups whole milk

Method
 

  1. Preheat skillet over medium-high heat.
  2. In a large bowl, sift together flour, baking powder, salt, and sugar.
  3. Make a well in the center and add egg, milk, and melted butter.
  4. Lightly whisk until just combined. Let batter rest 5 minutes.
  5. Add oil to skillet. Pour ¼ cup of batter for each pancake.
  6. Cook until bubbles form and edges look dry.
  7. Flip and cook another 1–2 minutes until golden brown.

Notes

• Don’t overmix the batter—lumps are okay!
• Resting the batter really makes a difference in fluffiness.
• You can swap whole milk with buttermilk for extra richness.
