- Preheat skillet over medium-high heat.
- In a large bowl, sift together flour, baking powder, salt, and sugar.
- Make a well in the center and add egg, milk, and melted butter.
- Lightly whisk until just combined. Let batter rest 5 minutes.
- Add oil to skillet. Pour ¼ cup of batter for each pancake.
- Cook until bubbles form and edges look dry.
- Flip and cook another 1–2 minutes until golden brown.
