Ingredients
  

Dry Ingredients
  • cups all-purpose flour
  • 2 tablespoons organic brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • teaspoon salt
Wet Ingredients
  • cups soy milk
  • ½ cup mashed or puréed sweet potato
  • 2 tablespoons canola oil
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon vanilla extract

Method
 

  1. In a blender or food processor, combine sweet potato, soy milk, oil, vinegar, and vanilla.
  2. Blend until smooth.
  3. In a medium bowl, whisk together flour, brown sugar, baking powder, cinnamon, nutmeg, and salt.
  4. Pour wet mixture into dry ingredients. Stir gently until just combined.
  5. Batter will be thick and slightly lumpy.
  6. Heat a lightly greased skillet over medium heat.

Notes

  • Batter is thick—use the back of a spoon to spread it into shape if needed.
