French Onion Gnocchi Bake

Ingredients
  

  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 large sweet onion thinly sliced
  • 1/4 cup white wine
  • 1 tablespoon fresh minced thyme
  • 2 cups beef broth
  • 1 lb gnocchi
  • Salt and pepper to taste
  • 1 cup shredded Swiss or Gruyère cheese
  • 8 –10 slices French bread toasted

Method
 

  1. Preheat oven to 400°F. In a skillet, melt olive oil and butter.
  2. Add onions and cook until deeply caramelized, about 20 minutes.
  3. Deglaze with wine, add thyme and beef broth. Simmer.
  4. Stir in gnocchi and cook 5–10 minutes until tender and sauce thickens.
  5. Season with salt and pepper. Transfer to greased baking dish.
  6. Top with cheese and bake 20–25 minutes until bubbly and golden.

Notes

  • For extra depth, use a mix of Swiss and Gruyère.
