Ingredients
  

For the Shrimp:
  • 1 lb jumbo shrimp peeled and deveined
  • ½ cup dry white wine
  • 4 tablespoons ½ stick unsalted butter, melted and divided
  • Juice from one lemon
  • 3 garlic cloves minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
For the Topping:
  • ¾ cup panko breadcrumbs
  • ¼ cup Parmesan cheese finely grated
  • ½ teaspoon salt
  • 2 tablespoons butter melted
  • Fresh parsley finely chopped (for garnish)

Method
 

  1. Preheat oven to 425°F (220°C).
  2. In a 9×13-inch baking dish, pour in white wine and 2 tablespoons melted butter.
  3. Place in oven for 10 minutes to reduce slightly.
  4. In a bowl, combine remaining butter, garlic, lemon juice, salt, and pepper.
  5. Add shrimp and toss to coat.
  6. In a separate bowl, mix panko, Parmesan, salt, and melted butter for topping.
  7. Remove dish from oven and arrange shrimp in a single layer over the wine-butter base.

Notes

  • For extra lemon flavor, add lemon zest to the garlic butter.
  • Use shell-on shrimp for a more rustic presentation, but adjust cook time slightly.
