Garlic Parmesan Chicken Pasta

Ingredients
  

  • 2 large chicken breasts
  • 1 lb 450g twisted pasta (fusilli)
  • 3 tablespoons unsalted butter
  • 4 –5 cloves minced garlic
  • 1 ½ cups heavy cream
  • ½ cup chicken broth
  • 1 cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes optional
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley chopped

Method
 

  1. Cook pasta in salted boiling water until al dente.
  2. Reserve ½ cup pasta water. Drain and set aside.
  3. Pat chicken dry and season with salt, pepper, and half the Italian seasoning.
  4. In a skillet, melt 1 tbsp butter over medium-high heat.
  5. Sear chicken 3–4 minutes per side until golden and cooked through. Remove and set aside.
  6. Lower heat to medium. Melt remaining butter.
  7. Add garlic and red pepper flakes.

Notes

  • For extra depth, add sautéed mushrooms or spinach.
  • Swap fusilli with penne, rigatoni, or spaghetti.
