Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Toss sweet potato cubes with olive oil, garlic, paprika, salt, and pepper in a large bowl.
  3. Spread evenly on the baking sheet and roast for 25–30 minutes, stirring halfway.
  4. Transfer to a serving dish and sprinkle with parsley before serving.
