Ingredients
  

  • 2 –3 very ripe bananas mashed
  • 1 teaspoon baking soda
  • 1/3 cup unsalted butter melted
  • 3/4 cup granulated sugar
  • Pinch salt
  • 2 large eggs beaten
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups gluten-free all-purpose flour with xanthan gum
  • 1/4 teaspoon xanthan gum omit if your flour already contains it

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Grease a 4 x 8-inch loaf pan with cooking spray.
  3. In a large bowl, mash bananas until smooth.
  4. Stir in baking soda, then mix in melted butter.
  5. Add sugar, salt, eggs, and vanilla; stir until combined.
  6. Fold in the flour and xanthan gum (if using) just until no dry spots remain.

Notes

  • Use very ripe bananas for the richest flavor and softest crumb.
