  • 2 medium-size ripe bananas mashed (~1 cup)
  • cup maple syrup
  • 1 tsp vanilla extract
  • ¾ cup quick oats
  • 1 tsp baking soda
  • tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • 1 cup white whole wheat flour
  • 1 cup grated carrots ~2 medium, grated and moisture removed
DAIRY-FREE FROSTING:
  • cup dairy-free cream cheese
  • cup dairy-free butter
  • 1 cup powdered sugar
  • 1 tsp maple syrup
  • 1 tsp ground cinnamon
  • 1 tbsp dairy-free milk optional, for thinning
CLASSIC FROSTING OPTION:
  • 4 oz cream cheese
  • 3 tbsp maple syrup
  • ¼ cup Greek yogurt
  • ½ tsp vanilla extract

Method
 

  1. Grate carrots and squeeze out excess moisture using a towel or cheesecloth.
  2. Preheat oven to 350ºF and lightly grease a 9x5-inch loaf pan.
  3. In a large bowl, whisk egg, applesauce, mashed bananas, maple syrup, and vanilla.
  4. Stir in oats, baking soda, cinnamon, ginger, nutmeg, and salt.
  5. Add flour and gently fold until just combined.
  6. Mix in the shredded carrots, avoiding overmixing.
