Ingredients
  

For the Marinade:
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp honey optional
  • 4 garlic cloves minced
  • 1 tsp Italian seasoning
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese
For the Chicken:
  • 1 1/2 to 2 lbs boneless skinless chicken breasts or thighs
  • More Parmesan for topping
  • Chopped fresh parsley for garnish

Method
 

  1. Whisk marinade ingredients in a bowl.
  2. Add chicken and toss to coat. Cover and marinate for 30 minutes to 4 hours.
  3. Preheat grill to medium-high. Oil grates.
  4. Remove chicken from marinade, grill 5–7 minutes per side until cooked through.
  5. Sprinkle with extra Parmesan during the last 1–2 minutes.
  6. Rest 5 minutes, garnish with parsley, and serve.

Notes

  • Use a meat thermometer to ensure the chicken reaches 165°F internally.
