Ingredients
  

  • 1 lb jumbo shrimp thawed & deveined
  • ½ cup basil pesto
  • 1 tbsp lemon juice about ½ lemon
  • ¼ cup Parmigiano cheese optional
  • Lemon wedges for serving

Method
 

  1. Soak skewers for 20–30 minutes.
  2. Combine shrimp, pesto, and lemon juice in a bowl. Chill 20–30 minutes.
  3. Preheat grill to medium-high. Thread shrimp onto skewers.
  4. Grill 2 minutes per side until shrimp are opaque.
  5. Sprinkle with cheese and serve with lemon wedges.

Notes

  • If using metal skewers, skip the soaking step.
  • For extra flavor, brush skewers with more pesto right after grilling.
