Ingredients
  

For the Stir Fry
  • 1 tablespoon peanut oil or vegetable/olive oil
  • 3 cups broccoli florets washed and patted dry
  • 1 lb ground beef
  • 1 yellow onion diced
  • 1 red bell pepper sliced
  • Salt and white pepper to taste
For the Sauce
  • 2 tablespoons cornstarch + 2 tablespoons cold water slurry
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 3 tablespoons packed brown sugar
  • 1 –2 tablespoons honey
  • 2 cloves garlic minced
  • 1/2 teaspoon ground ginger
  • 1 teaspoon toasted sesame oil
For Serving
  • 3 cups cooked rice any kind

Method
 

  1. Shake together cornstarch and cold water. Set aside.
  2. In a bowl, mix broth, soy sauce, brown sugar, honey, garlic, ginger, and sesame oil.
  3. Heat oil in a skillet over medium heat. Add broccoli and cook 4–5 minutes.
  4. Remove and set aside.
  5. Add ground beef and onion to the skillet. Season with salt/white pepper.
  6. Cook until browned, then drain grease.

Notes

  • You can use frozen broccoli—just thaw and pat dry first.
  • Swap ground beef for ground turkey or chicken to lighten it up.
  • Low-sodium soy sauce works great if you're watching salt.
