Ingredients
  

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 3 medium potatoes peeled and diced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • 1 cup shredded cheddar cheese
  • ½ cup beef broth
  • 1 tablespoon fresh parsley chopped

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground beef and brown, breaking up with a spoon. Set aside.
  3. Sauté onion and garlic in the same skillet until soft and fragrant.
  4. Add potatoes and seasonings, stirring gently to combine.
  5. Pour in beef broth, cover, reduce heat, and simmer until potatoes are tender.
  6. Sprinkle cheddar cheese on top, cover, and cook until melted.

• Yukon Gold or red potatoes hold their shape well and cook evenly.
