Ingredients
  

  • 1 pound ground beef
  • 3 large potatoes peeled and diced
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 cup beef broth
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons fresh parsley chopped

Method
 

  1. In a large skillet over medium heat, brown the ground beef. Drain excess fat.
  2. Add onion and garlic. Cook for 3–4 minutes until softened.
  3. Stir in potatoes, broth, paprika, thyme, salt, and pepper.
  4. Cover and simmer for 20 minutes, stirring occasionally, until potatoes are tender.
  5. Sprinkle cheddar cheese on top. Cover again for a few minutes until melted.
  6. Garnish with parsley and serve hot.
