Method
- In a large skillet over medium heat, brown the ground beef. Drain excess fat.
- Add onion and garlic. Cook for 3–4 minutes until softened.
- Stir in potatoes, broth, paprika, thyme, salt, and pepper.
- Cover and simmer for 20 minutes, stirring occasionally, until potatoes are tender.
- Sprinkle cheddar cheese on top. Cover again for a few minutes until melted.
- Garnish with parsley and serve hot.

Notes
- Dice the potatoes evenly for consistent cooking.
- Yukon Gold or Russet potatoes both work well.
