Ingredients
  

  • 1 pound ground beef
  • 2 tablespoons olive oil
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 1 red bell pepper thinly sliced
  • 1 zucchini cut into half-moons
  • 1 cup cherry tomatoes halved
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • Salt and black pepper to taste
  • ¼ teaspoon red pepper flakes optional
  • ¼ cup fresh parsley chopped
  • ½ cup feta cheese crumbled (optional)
  • Lemon wedges for serving

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and cook until soft, about 2–3 minutes.
  3. Add garlic and stir until fragrant.
  4. Add ground beef, break it up, and season with cumin, paprika, oregano, salt, pepper, and red pepper flakes.
  5. Cook for 6–8 minutes, until browned.
  6. Stir in red bell pepper and zucchini; cook for 4–5 minutes until tender.
