Ingredients
  

  • 1 lb ground beef 90% lean
  • 2 tablespoons sesame oil divided
  • 1 cup broccoli florets
  • 1 red bell pepper sliced
  • 1 cup snap peas
  • 1/2 cup carrots julienned
  • 1/2 onion sliced
For the sauce:
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup orange juice
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 2 teaspoons fresh grated ginger
  • 2 garlic cloves minced
  • 1 tablespoon cornstarch

Method
 

  1. In a small bowl, whisk together soy sauce, orange juice, vinegar, honey, ginger, garlic, and cornstarch. Set aside.
  2. Heat 1 tbsp sesame oil in a large pan over medium-high heat.
  3. Add ground beef, cook until browned, then transfer to a bowl.
  4. Add remaining sesame oil to the pan.
  5. Stir-fry onion, broccoli, bell pepper, snap peas, and carrots until crisp-tender.
  6. Pour in the sauce and cook until it thickens.
