This healthy breakfast pizza is a fun, protein-packed twist on the morning meal. With a simple two-ingredient yogurt dough, fluffy scrambled eggs, spinach, bacon, and melted cheese, it’s hearty enough for brunch yet light enough for busy weekdays.

Ingredients
  

For the Dough:
  • 1 cup self-rising flour
  • 1 cup plain Greek yogurt
For the Toppings:
  • 8 large eggs
  • Salt and pepper to taste
  • 1 cup fresh spinach leaves
  • 4 slices cooked crumbled bacon
  • 1 cup shredded Mexican or cheddar cheese
  • Chopped chives optional

Method
 

  1. Preheat oven to 450°F. Line a baking sheet with parchment paper.
  2. Mix flour and yogurt to form dough. Knead 1–2 minutes until smooth.
  3. Divide into 4 pieces and roll thin.
  4. Place dough rounds on baking sheet.
  5. Whisk eggs, scramble in a skillet with oil or butter, season with salt and pepper.
  6. Spray dough with cooking spray. Top with spinach, eggs, bacon, and cheese.
  7. Bake 15–20 minutes until crust is golden and cheese melted.

Notes

  • The two-ingredient dough can be made ahead and refrigerated for up to 24 hours.
