Healthy Strawberry Oatmeal Bars

These soft, crumbly bars feature a naturally sweet oat-almond crust, layered with a juicy strawberry filling. They're gluten-free, dairy-free, and made with simple pantry ingredients for a guilt-free indulgence.

Ingredients
  

  • cups rolled oats
  • ¾ cup almond flour
  • ¼ cup melted coconut oil
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • cups chopped fresh strawberries
  • 1 tbsp maple syrup for filling
  • 1 tsp lemon juice
  • 1 tbsp arrowroot powder or cornstarch

Method
 

  1. Preheat oven to 350°F and line 8x8 pan with parchment.
  2. Mix oats, almond flour, oil, syrup, and vanilla. Reserve ⅓ for topping.
  3. Press remaining crust into pan. Bake 10 minutes.
  4. Mix strawberries, syrup, lemon juice, and starch. Spread over crust.
  5. Crumble reserved topping. Bake 25–30 minutes more.
  6. Cool completely. Chill for clean cuts. Enjoy!

Notes

  • Frozen strawberries can be used—just thaw and drain first.
  • Swap almond flour for oat flour for a nut-free version.
