Homemade Gyro Meat

This easy baked gyro meat combines lamb, beef, and aromatic spices for a bold, juicy loaf you can slice and pan-fry to crispy perfection.

Ingredients
  

  • 1 medium onion cut into chunks
  • 4 garlic cloves
  • 1 lb ground lamb
  • 1 lb ground beef
  • 1 tbsp dried oregano
  • 2 tsp dried marjoram
  • 2 tsp dried thyme
  • 2 tsp dried rosemary
  • 1 tsp cumin
  • 2 tsp sea salt
  • ½ tsp black pepper

Method
 

  1. Preheat oven to 300°F and line a loaf pan with parchment.
  2. Process onion and garlic in food processor until smooth.
  3. Strain with towel to remove excess liquid.
  4. Add meats, herbs, salt, and pepper. Blend into a paste.
  5. Press mixture into loaf pan tightly.
  6. Bake 45–55 minutes, or until internal temp is 165°F.
  7. Tent with foil and rest until 175°F.

Notes

  • You can freeze extra slices for later—just reheat in a hot skillet.
  • Lamb adds the classic gyro flavor, but you can use all beef if preferred.
