Ingredients
  

  • 4 large lemons
  • 2 cups granulated sugar
  • 1 cup water

Method
 

  1. Wash and zest the lemons, then juice them. Discard any seeds.
  2. In a saucepan, combine juice, zest, sugar, and water. Stir until dissolved.
  3. Bring to a boil, then reduce to a simmer for 30–40 minutes.
  4. Test on a cold plate for doneness. If it gels, it's ready.
  5. Let cool slightly, then pour into sterilized jars.
  6. Seal and let cool completely.
