Ingredients
  

  • Pie crust refrigerated or homemade
  • 4 large egg yolks lightly beaten
  • 2 1/2 cups 600 ml heavy whipping cream
  • 2/3 cup 150 g packed light brown sugar
  • 1/3 cup 45 g cornstarch, sifted
  • 1/2 tsp salt
  • 1/2 cup 120 ml honey
  • 2 tsp vanilla extract
  • Flaky sea salt for sprinkling

Method
 

  1. Press pie crust into an 8- or 9-inch pie pan and chill while preparing filling.
  2. In a saucepan, combine cream, brown sugar, cornstarch, and salt.
  3. Stir constantly over medium heat until it boils and thickens slightly.
  4. In a separate bowl, whisk egg yolks.
  5. Slowly add a bit of the hot cream to temper, then combine fully.
  6. Return egg mixture to saucepan, stir, and add honey and vanilla. Mix until smooth.

Notes

  • The pie will puff during baking and settle as it cools—that’s perfectly normal.
  • Use local honey if possible for the freshest flavor.
  • For an extra-smooth filling, strain the custard before pouring into the crust.
