Ingredients
  

  • 2 pounds carrots diagonally cut into about 2 to 3-inch pieces
  • 5 tablespoons butter
  • 4 cloves garlic minced
  • 2 tablespoons honey
  • ¼ teaspoon salt or to taste
  • ¼ teaspoon fresh ground black pepper
  • Chopped fresh parsley for garnish

Method
 

  1. Preheat oven to 425°F and grease a rimmed baking sheet.
  2. Slice carrots diagonally and set aside.
  3. Melt butter in a skillet; sauté garlic for 3 minutes until golden.
  4. Stir in honey and remove from heat.
  5. Toss carrots in glaze with salt and pepper.
  6. Spread on baking sheet in one layer.

Notes

  • Use evenly sized carrot pieces for even roasting.
