Honey Garlic Ground Beef and Broccoli

Ingredients
  

The Stir-Fry:
  • 1 pound lean ground beef
  • 3 cups broccoli florets
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 tablespoon olive oil
The Honey Garlic Sauce:
  • cup soy sauce low sodium preferred
  • ¼ cup honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon ginger grated
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • ½ teaspoon red pepper flakes optional
Serving (Optional):
  • 2 cups cooked rice or quinoa
  • 1 tablespoon sesame seeds
  • 2 green onions sliced

Method
 

  1. Whisk together the soy sauce, honey, rice vinegar, ginger, and red pepper flakes. Set aside.
  2. Mix cornstarch and water in a separate cup to make a slurry.
  3. Heat oil in a large skillet over medium heat. Sauté onion for 2–3 minutes until softened.
  4. Add beef and cook until browned, breaking it apart. Stir in garlic and cook 30 seconds more.
  5. Stir in broccoli and ¼ cup water.
  6. Cover and steam for 3–4 minutes until tender-crisp.

Notes

• You can swap broccoli for green beans, bell peppers, or snap peas.
• For a lower-carb option, serve over cauliflower rice.
• To make it spicier, increase the red pepper flakes.
