Japchae – Authentic Korean Glass Noodle Stir Fry

Japchae is a classic Korean stir-fry featuring sweet potato glass noodles, marinated beef, and crisp vegetables tossed in a soy-sesame sauce. Finished with a sprinkle of sesame seeds, it’s a wholesome and beautiful dish that’s perfect for dinner, potlucks, or meal prep.

Ingredients
  

  • 8 oz sweet potato glass noodles dangmyeon
  • 1/2 lb beef sirloin thinly sliced
  • 1 medium carrot julienned
  • 1/2 onion thinly sliced
  • 2 cups spinach leaves
  • 2 green onions chopped
  • 3 cloves garlic minced
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons sesame oil
  • 1 tablespoon vegetable oil for stir-frying
  • 1 tablespoon sesame seeds

Method
 

  1. Cook noodles, drain, rinse cold, toss with sesame oil.
  2. Mix soy sauce, brown sugar, garlic, sesame oil.
  3. Stir-fry beef with half of the sauce. Remove.
  4. Stir-fry carrots, onions, and spinach until just tender.
  5. Toss noodles with beef, veggies, remaining sauce, and green onions.
  6. Garnish with sesame seeds and serve.

Notes

  • Use pre-sliced stir-fry beef for quicker prep.
  • For added flavor, marinate the beef in 1 tbsp soy sauce and 1 tsp sesame oil for 10 minutes.
  • Want to keep it vegetarian? Swap beef for mushrooms or tofu.
