Lasagna Roll Ups

Lasagna roll ups are a simplified take on traditional lasagna. Instead of layering, tender lasagna noodles are filled with ricotta cheese, beef marinara, and rolled into single-serve portions. Baked with mozzarella and parmesan on top, they’re saucy, comforting, and easy to serve.

Ingredients
  

  • 12 lasagna noodles cooked al dente
  • 1 lb ground beef
  • ½ yellow onion diced
  • 2 cloves garlic minced
  • 3 cups marinara sauce divided
  • cups ricotta cheese
  • cups shredded mozzarella divided
  • ½ cup grated parmesan cheese divided
  • 1 egg
  • Salt & pepper to taste

Method
 

  1. Cook lasagna noodles and lay flat to cool.
  2. In a skillet, cook beef with onion and garlic until browned.
  3. Stir in 1½ cups marinara and simmer 5 minutes.
  4. Mix ricotta, 1 cup mozzarella, ¼ cup parmesan, egg, salt, and pepper.
  5. Spread cheese mixture on noodles, top with meat sauce, and roll up.
  6. Spread 1 cup marinara in bottom of greased 9x13” dish. Add roll ups seam-down.

Notes

• Use freshly grated cheese for the best melt and flavor.
• You can make the filling a day ahead and refrigerate.
• Substitute ground turkey or Italian sausage for a twist.
