Ingredients
  

Chicken
  • 24 chicken wings 1st & 2nd segments, about 3 pounds
Rub
  • 2 tablespoons baking powder
  • 2 tablespoons brown sugar
  • tablespoons lemon pepper seasoning
  • 2 teaspoons each garlic powder onion powder, salt
  • 1 teaspoon paprika
  • ¼ –½ teaspoon cayenne pepper optional
Lemon Pepper Sauce
  • 3 tablespoons melted butter
  • ½ tablespoon lemon pepper seasoning or more to taste
  • 1 tablespoon lemon juice
  • 1 teaspoon honey

Method
 

  1. Pat chicken wings very dry with paper towels.
  2. Preheat oven to 400°F (200°C).
  3. Line a baking sheet with foil, place a wire rack on top, and spray lightly with cooking spray.
  4. Mix rub ingredients. Toss half the wings with half the rub in a bag, repeat with remaining wings and rub.
  5. Arrange on rack without overlapping.
  6. Bake 35–45 minutes until cooked through.
  7. Broil on both sides until crispy, watching closely.

Notes

  • Drying the wings well is key to extra crispiness.
  • Adjust cayenne pepper for more or less heat.
  • Sauce can be doubled if you like extra coating.
