- Preheat oven to 375°F (190°C).
- In a large bowl, mix beef, onion, garlic, breadcrumbs, egg, milk, Worcestershire sauce, ketchup, oregano, basil, salt, and pepper until just combined.
- Shape into a loaf and place on baking sheet or loaf pan.
- Bake for 40–45 minutes until internal temp reaches 160°F.
- Rest for 10 minutes before slicing.
- Meanwhile, bake or microwave scrubbed potatoes until tender.

Notes
• Don’t overmix the meatloaf or it may turn out dense.
• Leftover meatloaf is great in sandwiches the next day.
• Use Yukon Gold potatoes for a creamier mash if desired.
