Ingredients
  

Salad
  • 8 cups arugula packed
  • 11 oz can mandarin segments
  • 1 red onion thinly sliced
  • ½ cup roasted almonds coarsely chopped
  • ½ cup shaved parmesan cheese
  • ¼ cup golden raisins
Dressing
  • 3 tbsp mandarin juice from can
  • 1 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • ½ tsp kosher salt
  • ¼ tsp chili flakes
  • cup extra virgin olive oil

Method
 

  1. Add dressing ingredients to a jar and shake until combined.
  2. Place arugula in a serving bowl.
  3. Top with almonds, parmesan, raisins, and mandarin segments.
  4. Drizzle with dressing, toss, and serve immediately.
